  • 2 large sweet potatoes Scrubbed and sliced into 1/2-inch rounds
  • 2 tablespoons olive oil For tossing the sweet potatoes

  • 1/2 teaspoon black pepper To taste
  • 1/2 teaspoon smoked paprika Optional for extra flavor
  • 1 tablespoon honey To drizzle before serving
  • 1/2 cup feta cheese Crumble for topping
  • 1/4 cup fresh parsley or mint Chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Scrub the sweet potatoes and slice them into 1/2-inch rounds.
  3. Toss the sweet potato rounds with olive oil, flaky salt, black pepper, and smoked paprika if desired.
  4. Spread the sweet potato rounds out evenly on the sheet pan to allow for even cooking.
Cooking
  1. Roast the sweet potatoes in the oven for 20-25 minutes.
  2. Flip the rounds and roast for an additional 8-12 minutes, until the edges are browned and the centers are fork-tender.
Serving
  1. Once out of the oven, drizzle the sweet potatoes with honey and sprinkle with crumbled feta and chopped parsley or mint.
  2. Serve warm or at room temperature.

Notes

For added flavor, consider a splash of apple cider vinegar before serving. These rounds can be stored in the refrigerator for up to 4 days. Reheat in the oven or skillet for best texture.
