Main Ingredients
  • 1 large large green cabbage (or 2 small ones)
  • 3-4 tablespoons olive oil Use enough to coat the cabbage for roasting.
  • 1 teaspoon garlic powder Alternatively, use 2 cloves of fresh garlic, finely minced.
  • 1 teaspoon smoked paprika Optional but highly recommended.
  • 1 teaspoon salt Adjust to taste.
  • 0.5 teaspoon black pepper
  • 0.5-0.75 cup grated Parmesan Either powdered or freshly grated works.
Optional Garnishes
  • lemon wedges For squeezing over before serving.
  • chopped parsley
  • red pepper flakes For an extra kick.

Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. Peel off any loose outer leaves from the cabbage and slice it into steaks about 3/4 to 1 inch thick, keeping the core in each slice.
  3. Place the cabbage steaks on a lined sheet pan and brush both sides with olive oil. Sprinkle with garlic powder, smoked paprika (if using), salt, and pepper.
Cooking
  1. Roast the cabbage for about 20 minutes, then carefully flip each steak.
  2. Roast for an additional 12 to 18 minutes, until the edges are deep golden and the center is tender when punctured with a fork.
  3. During the last 8 to 10 minutes of roasting, sprinkle Parmesan over the steaks.
  4. Serve warm, optionally squeezing lemon juice over the top before serving.

Notes

For perfect roasting, ensure to slice the cabbage thick enough, do not skimp on the oil, and give the steaks enough space on the pan. Adding Parmesan towards the end prevents burning.
