Ingredients

Casserole base
  • 8 slices rye bread, cubed or torn Slightly stale bread works well.
  • 1 lb corned beef or pastrami, sliced Choose corned beef for classic flavor, pastrami for a smoky edge.
  • 1 cup sauerkraut, well drained and squeezed Draining is essential to prevent sogginess.
  • 2 cups Swiss cheese, shredded Reserve some cheese for topping.
  • 1/2 cup Thousand Island dressing Use store-bought or homemade, but do not overdo it.
  • 1-2 Tbsp butter or cooking spray For greasing the baking dish.

Method

Layering
  1. Preheat the oven to 350°F (175°C).
  2. Begin by cubing or tearing the rye bread and place it at the bottom of a greased baking dish. Do not pack it down too hard.
  3. Add half of the sliced meat evenly over the bread.
  4. Spread the drained sauerkraut over the meat.
  5. Drizzle some Thousand Island dressing over the sauerkraut.
  6. Sprinkle a layer of Swiss cheese on top of the dressing.
  7. Repeat the layers with the remaining ingredients, finishing with a layer of Swiss cheese on top.
  8. Bake for 45 minutes or until bubbly and the top is golden brown. If the cheese browns too quickly, cover with foil.

Notes

This casserole can be prepared ahead of time. Layer the ingredients, but hold off on adding the dressing until ready to bake to maintain bread texture. Leftovers are best stored in an airtight container and can be reheated in the oven for optimal crispness.
