  • 8 slices rye bread Quality rye bread recommended to avoid sogginess.
  • 1 cup Russian dressing More dressing can be used if desired.
  • 1 pound corned beef Stacked generously for best flavor.
  • 1 cup sauerkraut Well-drained to prevent sogginess.
  • 8 slices Swiss cheese Pre-sliced for ease.
  • 2 tablespoons butter Melted, for brushing the top.

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In a baking dish, lay down half of the rye bread slices.
  3. Spread Russian dressing over the bread.
  4. Layer corned beef on top.
  5. Add sauerkraut evenly over the corned beef.
  6. Top with Swiss cheese slices.
  7. Drizzle more Russian dressing on top.
  8. Cover with the other slices of bread.
  9. Brush the top slices with melted butter.
Baking
  1. Cover the baking dish with foil and bake for about 20 minutes.
  2. Remove the foil and bake for another 5-10 minutes until the top is golden and crispy.

Notes

Cool leftovers before storing in an airtight container. Best consumed within 2-3 days. Reheat in the oven at 325°F for about 10 minutes.
