Method
Cheesecake Layer
- Preheat your oven to 325°F (165°C). Line the bottom of a springform pan with parchment and lightly grease the sides.
- Beat cream cheese and sugar until smooth.
- Mix in eggs one at a time, then stir in sour cream and vanilla.
- Pour mixture into the prepared pan and bake until the center has a slight jiggle, about 35 to 45 minutes.
- Cool fully, then chill for at least 4 hours, preferably overnight.
Red Velvet Cake Layers
- Preheat oven to 350°F (175°C) and grease and line two 8-inch or 9-inch round pans.
- In one bowl, mix your dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix sugar, oil, eggs, vanilla, buttermilk, and red food coloring.
- Stir in dry ingredients until just combined and then stir in vinegar.
- Split the batter between pans and bake until a toothpick comes out clean, about 25 to 35 minutes.
- Cool completely.
Frosting
- Beat cream cheese and butter until smooth.
- Add powdered sugar in batches, then stir in vanilla and a pinch of salt.
- Chill for 15 minutes if too soft.
Assembly
- Place one red velvet layer on a plate and spread a thin layer of frosting.
- Add the chilled cheesecake layer, then another thin layer of frosting.
- Top with the second red velvet layer and frost the top and sides.
- Chill for at least 1 hour before slicing.
Notes
For a decorative touch, add cake crumbs around the edges. This cake keeps well in the fridge for up to 5 days and can be frozen.
