Ingredients
  

For the Crust
  • 1.25 cups all purpose flour
  • 0.25 cups powdered sugar
  • 0.5 cups cold butter (cubed)
  • 1 large egg yolk
  • 1-2 tablespoons cold water Adjust as needed
  • 1 pinch salt
For the Filling
  • 2 cups milk
  • 0.33 cups sugar
  • 3 tablespoons cornstarch
  • 1 pinch salt
  • 2 large egg yolks
  • 1 tablespoon butter
  • 1.5 teaspoons vanilla
For the Topping
  • 2-3 cups fresh raspberries Fresh is best
Optional Glaze
  • 2 tablespoons raspberry or apricot jam
  • 1 teaspoon water To thin the jam

Method
 

Preparation
  1. Make the crust by mixing flour, powdered sugar, and salt. Cut in the cold butter until it resembles sandy crumbs. Add egg yolk and 1 tablespoon of cold water, mixing until it comes together. Press into a tart pan, prick with a fork, and chill for 15 to 20 minutes.
Baking
  1. Preheat the oven to 350°F (175°C). Bake the crust for 18 to 22 minutes until lightly golden. Let it cool completely.
Filling
  1. In a saucepan, whisk together sugar, cornstarch, and salt. Slowly whisk in the milk and cook over medium heat, stirring often until it thickens and bubbles. Temper the egg yolks with a little hot mixture, then return to the pot and cook briefly to set. Stir in butter and vanilla, then remove from heat.
  2. Pour the filling into a bowl, press plastic wrap directly on the surface to prevent a skin, and chill until cool (about 1 to 2 hours).
Assembly
  1. Spoon the filling into the cooled crust and smooth it out. Top with fresh raspberries. If desired, warm the jam with water and lightly brush it over the berries for a glossy finish.

Notes

Cool everything before assembly to avoid a soggy crust or sliding filling. Variations include adding lemon zest to the filling or a thin layer of chocolate under the filling.
