Raspberry Mint Mojito

Ingredients
  

Fresh Ingredients
  • 6 pieces Fresh raspberries Plus extra for garnish
  • 8-12 leaves Fresh mint leaves
  • 1/2 pieces Lime Juiced plus a few wedges for garnish
  • 1-2 teaspoons Sugar or simple syrup Or 1 tablespoon simple syrup
  • 2 ounces White rum Skip or swap for zero proof if desired
  • as needed cubes Ice
  • as needed ounces Club soda or sparkling water

Method
 

Preparation
  1. In a tall glass, add mint leaves, raspberries, and sugar (or simple syrup). Add lime juice too.
  2. Gently muddle everything together. You want the raspberries smashed and juicy, but do not shred the mint into tiny bits.
  3. Fill the glass with ice and pour in the rum.
  4. Top with club soda and stir gently from the bottom once or twice.
  5. Taste it and adjust sweetness or tartness by adding more sugar or lime juice if needed.
  6. Garnish with a lime wedge, a mint sprig, and a couple of raspberries.

Notes

Avoid over-muddling the mint to prevent bitterness. You can prep parts ahead of time but combine ingredients just before serving to keep it fresh and bubbly.
