Method
Dough Preparation
- In a large bowl, combine warm milk and yeast, letting it sit for 5 minutes to activate.
- Mix in sugar, melted butter, and egg until well combined.
- Gradually add flour and salt, mixing until a soft, slightly tacky dough forms.
- Knead the dough on a floured surface for about 5-7 minutes.
- Place the dough in a greased bowl, cover, and let rise until doubled in size, about 1-2 hours.
Filling Preparation
- In a small pot, combine raspberries, sugar, and lemon juice. Cook over medium heat until the berries soften.
- Stir in the cornstarch slurry and continue cooking for a few minutes until thickened.
- Let the mixture cool before spreading on dough.
Roll Assembly
- After the dough has risen, roll it out on a floured surface to a rectangle about 1/4 inch thick.
- Spread the cooled raspberry filling evenly over the dough, leaving a border for easier rolling.
- Roll the dough tightly from one side to the other and slice into 12 even pieces.
- Place rolls in a greased baking pan, cover, and let rise for 30 minutes.
Baking
- Preheat the oven to 350°F (175°C).
- Bake for 25-30 minutes until golden brown.
Frosting Preparation
- While rolls are baking, prepare the cream cheese frosting by mixing cream cheese, butter, powdered sugar, vanilla, and salt until smooth.
Serving
- Once rolls are baked, remove from the oven and spread cream cheese frosting on top while still warm.
Notes
For best results, follow the tips on keeping the filling gooey and adjusting for different kinds of raspberries. The rolls can be made overnight for easier baking in the morning. Store leftovers in an airtight container.
