Rainbow Veggie Mason Jar Salad

Ingredients
  

For the dressing
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • 1 tablespoon olive oil
  • 1 teaspoon honey Can be adjusted to taste.
  • 1 pinch salt
  • 1 pinch pepper
Jar salad layers
  • 1 cup chickpeas or edamame Choose one or mix both.
  • 1 cup chopped cucumber
  • 1 cup shredded carrots
  • 1 cup red bell pepper strips
  • 1/2 cup cherry tomatoes Optional, but recommended.
  • 1/4 cup feta or pumpkin seeds Add for flavor and texture.
  • 2 cups greens (romaine, spinach, spring mix, or shredded cabbage) Use sturdy greens for longevity.

Method
 

Preparation
  1. Prepare the dressing by mixing lemon juice, olive oil, honey, salt, and pepper in a small bowl.
  2. In a wide mouth mason jar, pour 2 tablespoons of the dressing at the bottom.
  3. Layer the ingredients in the following order: chickpeas or edamame, chopped cucumber, shredded carrots, red bell pepper strips, cherry tomatoes (if using), feta or pumpkin seeds, and finally pack the greens on top.
  4. Seal the jar tightly with a lid and store in the fridge.
Serving
  1. When ready to eat, shake the jar to mix all ingredients and pour into a bowl or enjoy directly from the jar.

Notes

For variations, try Mediterranean ingredients or make it dairy-free or kid-friendly. Experiment with different proteins and dressing flavors to keep it interesting.
