Ingredients
  

For the latte
  • 1 cup milk (any kind, such as dairy or oat milk) Dairy milk makes it extra creamy, oat milk gives a nutty flavor.
  • 1 to 2 tablespoons pumpkin puree Use plain canned pumpkin, not pumpkin pie filling.
  • 1 to 2 teaspoons pumpkin pie spice Or make your own with cinnamon, ginger, nutmeg, and cloves.
  • 1 to 2 tablespoons sweetener (maple syrup or brown sugar) Adjust to taste.
  • 1/2 teaspoon vanilla extract Adds flavor to the latte.
  • optional whipped cream For topping, if desired.
  • 1 to 2 shots espresso or strong brewed coffee Espresso is classic but strong coffee works too.

Method
 

Preparation
  1. Grab a small saucepan and put it on medium heat.
  2. Add 1 to 2 tablespoons pumpkin puree, 1 to 2 teaspoons pumpkin pie spice, and 1 to 2 tablespoons sweetener.
  3. Stir for about 30 seconds to warm up and enhance the aroma.
  4. Pour in about 1 and 1/4 cups milk and whisk while it warms, without letting it boil.
  5. Turn off the heat and stir in 1/2 teaspoon vanilla extract.
  6. If desired, whisk hard for 20 to 30 seconds for froth.
  7. Pour espresso or strong coffee into a mug, usually about 1/2 cup.
  8. Add the pumpkin milk mixture on top and adjust sweetness or spice to your preference.

Notes

Warm the pumpkin and spices to enhance flavor. Do not overheat the milk. Adjust sweetness to your liking. Top with whipped cream for a coffee shop feel.
