  • 8 slices Thick sliced bread (Texas toast or brioche recommended) Use day-old bread for better soaking.
  • 4 large Eggs
  • 1 cup Milk or half and half
  • 1/2 cup Pumpkin puree Do not use pumpkin pie filling.
  • 1 teaspoon Pumpkin pie spice
  • 1 teaspoon Vanilla extract Optional, providing additional flavor.
  • 2 tablespoons Brown sugar or maple syrup Optional for sweetness.
  • 2 tablespoons Butter or oil For cooking in the pan.
Optional Toppings
  • 1 tablespoon Cinnamon sugar For sprinkling before serving.
  • to taste Maple syrup or warm honey For dipping.
  • 1 cup Greek yogurt Mixed with a little cinnamon for serving.

Method
 

Preparation
  1. Cut the bread slices into sticks about 1 inch wide.
  2. In a medium bowl, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, vanilla, and brown sugar.
Cooking
  1. Heat a skillet over medium heat and melt butter.
  2. Dip each bread stick quickly in the egg mixture, coating all sides, but do not soak.
  3. Cook the sticks in batches for about 6 to 8 minutes, turning until golden brown on all sides.
  4. Keep warm in the oven at low heat while cooking the remaining sticks.
Serving
  1. Prior to serving, toss the sticks in cinnamon sugar mixed with pumpkin spice.
  2. Serve with optional dipping sauces like maple syrup or Greek yogurt.

Notes

These French toast sticks can be made ahead and stored in the fridge for up to 3 days or frozen for 2 months. Reheat in the oven at 375°F for 8-10 minutes or in an air fryer for 4-6 minutes for best results. Avoid soaking the bread too long to prevent sogginess.
