For the filling
  • 1 can pumpkin puree Use pumpkin puree, not pumpkin pie filling.
  • 3/4 cup granulated sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 1 teaspoon ground cinnamon Fresh spices yield better flavor.
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pie crust in a 13x18 inch sheet pan, pressing it well into the corners.
  3. In a large bowl, mix together the pumpkin puree, sugar, heavy cream, eggs, cinnamon, nutmeg, ginger, and salt until smooth. Do not overmix.
Baking
  1. Pour the filling into the prepared crust.
  2. Bake for 45 minutes, or until the edges are set and the center has a gentle wobble.
Cooling and Serving
  1. Allow the pie to cool completely before slicing to achieve clean edges.

Notes

Cool the pie fully before slicing to prevent messy edges. Toppings like whipped cream, caramel, and pecans enhance the flavor and presentation.
