Preparation
- Preheat your oven to 425°F (220°C).
- If desired, par-bake the crust for 8 to 10 minutes to prevent sogginess.
- If using fresh pumpkin, roast a small pie pumpkin at 400°F (200°C) cut side down until tender (35 to 50 minutes), cool, scoop flesh, and blend until smooth.
Filling
- In a large bowl, whisk the eggs and add pumpkin puree, brown sugar, spices, salt, vanilla, and cream.
- Whisk until smooth, avoiding incorporating too much air.
Baking
- Carefully pour the filling into the pie crust and gently tap to release air bubbles.
- Bake at 425°F (220°C) for 15 minutes, then reduce oven temperature to 350°F (175°C) and bake for an additional 35 to 45 minutes.
- The edges should look set with the center slightly jiggly.
Cooling
- Cool completely on the counter for at least 2 hours before slicing.
Notes
Chilling the pie after cooling improves texture and slicing. Cover and refrigerate for up to 4 days, or freeze for up to 1 month.
