Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Spoon and level flour for accuracy.
  • 1 teaspoon baking soda Ensure it is fresh for best results.
  • 1 teaspoon baking powder
  • 1 teaspoon salt Enhances the flavor.
  • 1 tablespoon ground cinnamon Add more for a stronger flavor.
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves Or use pumpkin pie spice.
Wet Ingredients
  • 1 cup pumpkin puree Use canned pure pumpkin, not filling.
  • 1/2 cup brown sugar For deeper flavor.
  • 1/2 cup granulated sugar
  • 1/2 cup oil Neutral oil like vegetable or canola.
  • 2 large eggs For structure and rise.
  • 1 teaspoon vanilla extract Do not skip this.
Optional Add-Ins
  • 1 cup chocolate chips or nuts Chocolate for dessert vibes, nuts for coffee shop vibes.

Method
 

Preparation
  1. Preheat your oven to 350 F (175 C) and grease a standard loaf pan, optionally lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
  3. In a large bowl, stir together the pumpkin puree, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
  4. Add the dry ingredients to the wet ingredients and stir just until no dry flour is visible. Avoid overmixing.
  5. If desired, fold in chocolate chips or nuts.
Baking
  1. Pour the batter into the prepared loaf pan and bake for about 50 to 60 minutes. Check for doneness starting at 50 minutes with a toothpick. It should come out with a few moist crumbs.
  2. Let the loaf cool in the pan for 10 to 15 minutes before transferring it to a wire rack. Allow to cool before slicing.

Notes

To prevent dryness, avoid overbaking, store properly, and consider a light topping or glaze for added flavor.
