Preparation
- Preheat your oven to 350 F (175 C) and grease a standard loaf pan, optionally lining it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
- In a large bowl, stir together the pumpkin puree, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and stir just until no dry flour is visible. Avoid overmixing.
- If desired, fold in chocolate chips or nuts.
Baking
- Pour the batter into the prepared loaf pan and bake for about 50 to 60 minutes. Check for doneness starting at 50 minutes with a toothpick. It should come out with a few moist crumbs.
- Let the loaf cool in the pan for 10 to 15 minutes before transferring it to a wire rack. Allow to cool before slicing.

To prevent dryness, avoid overbaking, store properly, and consider a light topping or glaze for added flavor.
