Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
- In a bowl, whisk the melted butter and sugar together, then add the eggs and vanilla, mixing well.
- Stir in the cocoa powder, flour, and salt until just combined; do not overmix.
- In another bowl, beat the softened cream cheese with powdered sugar and vanilla until smooth.
- In a separate bowl, mix 3/4 cup of the brownie batter with pumpkin puree and pumpkin spice.
Assembly and Baking
- Spread the plain brownie batter in the prepared pan.
- Dollop the pumpkin mixture and cream cheese mixture over the brownie base.
- Using a butter knife, gently swirl the mixtures together without blending completely.
- Bake for 30-40 minutes, checking at 30 minutes; the edges should be set and the center slightly moist.
- Allow to cool completely before slicing for cleaner cuts.
Notes
Chill the brownies for an hour before cutting to ensure neat squares. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
