Ingredients
  

For the Brownie Base
  • 1 cup Butter (melted) or neutral oil
  • 1 cup Sugar White sugar or brown sugar for extra chew
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 3/4 cup Unsweetened cocoa powder Regular unsweetened or Dutch process
  • 1 cup All purpose flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Espresso powder Optional, but enhances chocolate flavor
For the Pumpkin Layer
  • 3/4 cup Pumpkin puree Pure pumpkin puree, not pumpkin pie filling
  • 1 teaspoon Pumpkin pie spice Or a mix of cinnamon, ginger, and nutmeg
For the Cream Cheese Swirl
  • 8 ounces Cream cheese Full fat is best, softened
  • 1/2 cup Powdered sugar For the cream cheese mixture
  • 1 teaspoon Vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  2. In a bowl, whisk the melted butter and sugar together, then add the eggs and vanilla, mixing well.
  3. Stir in the cocoa powder, flour, and salt until just combined; do not overmix.
  4. In another bowl, beat the softened cream cheese with powdered sugar and vanilla until smooth.
  5. In a separate bowl, mix 3/4 cup of the brownie batter with pumpkin puree and pumpkin spice.
Assembly and Baking
  1. Spread the plain brownie batter in the prepared pan.
  2. Dollop the pumpkin mixture and cream cheese mixture over the brownie base.
  3. Using a butter knife, gently swirl the mixtures together without blending completely.
  4. Bake for 30-40 minutes, checking at 30 minutes; the edges should be set and the center slightly moist.
  5. Allow to cool completely before slicing for cleaner cuts.

Notes

Chill the brownies for an hour before cutting to ensure neat squares. Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
