Ingredients
  

For the crust
  • 2 cups Graham cracker crumbs Crushed fine for better crust consistency.
  • 1/2 cup Melted butter Acts as glue for the crust.
  • 1/4 cup Granulated sugar Adds sweetness to the crust.
For the cheesecake filling
  • 16 oz Cream cheese Full fat, softened to room temperature.
  • 1 cup Pumpkin puree Use plain pumpkin puree, not pumpkin pie filling.
  • 1 cup Granulated sugar Keeps it clean and simple.
  • 2 large Eggs Room temperature eggs for easier blending.
  • 1 tsp Vanilla extract Enhances flavor.
  • 2 tsp Pumpkin pie spice Or use a blend of cinnamon, nutmeg, and cloves.
  • 1/4 tsp Salt Balances the sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line a 9x13 pan with parchment paper and lightly grease if desired.
  3. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  4. Press the mixture firmly into the bottom of the prepared pan.
  5. Pre-bake the crust for 10 minutes, then allow to cool slightly.
Making the filling
  1. In a large mixing bowl, beat softened cream cheese until smooth.
  2. Gradually add sugar and mix until well combined.
  3. Add pumpkin puree, vanilla, spices, and salt; mix until smooth.
  4. Add eggs one at a time on low speed, mixing just until combined.
Baking
  1. Pour the filling over the pre-baked crust and bake for 35 to 40 minutes, until the center is set but still slightly wobbly.
  2. Remove from oven and let cool at room temperature.
  3. Refrigerate for at least 4 hours, preferably overnight, before slicing.

Notes

For neat slices, wipe the knife between cuts. These bars can be made ahead of time and stored in the fridge. They can also be frozen for later enjoyment.
