Preparation
- Remove the roast from the fridge about 1 to 2 hours before cooking to bring it to room temperature.
- Pat the roast dry with paper towels.
- Season the roast generously with kosher salt, black pepper, garlic, and rosemary. Optionally rub olive oil to help the seasoning stick.
Cooking
- Preheat your oven to a high temperature for initial browning.
- Roast the prime rib at high heat for a short time, then reduce the temperature and continue to cook gently.
- Use a meat thermometer to monitor the roast. Aim for 120-125°F for rare and 125-130°F for medium-rare.
- Rest the roast for 20 to 30 minutes before slicing.
Serving Suggestions
- Serve the prime rib with mashed potatoes, roasted carrots, creamed spinach, salad, and dinner rolls.
Notes
Prime rib is best served fresh. Leftovers can be reheated gently. Cook uncovered for browning, or loosely tent with foil if browning too fast. Use a thermometer for accuracy.
