Ingredients

Stew Ingredients
  • 2 pounds pork shoulder, cut into bite-sized chunks Best cut for a tender stew
  • 1 large head of green cabbage, chopped Main vegetable in the stew
  • 4 cups beef broth For the base of the stew
  • 2 tablespoons olive oil For browning the pork
  • 2 medium carrots, diced Optional, for added flavor
  • 1 stalk celery, diced Optional, for added flavor
Cheddar Dumplings
  • 1 ½ cups all-purpose flour Basic ingredient for dumplings
  • 1 tablespoon baking powder Leavening agent for fluffiness
  • ½ teaspoon salt
  • ½ cup sharp cheddar cheese, shredded For flavor in dumplings
  • ¾ cup milk Moisture for dumpling dough

Method

Prepare the Stew
  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the pork chunks on all sides for about 5-7 minutes.
  3. Add chopped cabbage, diced carrots, and celery; stir until cabbage begins to soften.
  4. Pour in beef broth, bring to a gentle simmer, and cook for 45 minutes until pork is tender.
Make the Dumplings
  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Stir in shredded cheddar cheese.
  3. Add milk and stir until just combined; do not overmix.
  4. Once the stew is ready, scoop dumpling dough in small mounds on top of the simmering stew.
  5. Cover with a lid and let cook for 12-15 minutes without peeking until dumplings are fluffy.

Notes

For a lighter stew, consider using pork loin. Store in airtight containers; refrigerated stew keeps for 3-4 days, and the stew base freezes well for up to 3 months.
