Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs, milk, melted butter, and pink dragon fruit puree until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Baking
  1. Divide the batter evenly among the prepared cake pans.
  2. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  3. Once baked, remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Frosting

  2. Gradually add powdered sugar, beating until combined and fluffy.
  3. Mix in heavy cream and vanilla extract to achieve desired frosting consistency.
Assembly

  2. Cover the entire cake with a crumb coat and chill for 30 minutes.
  3. Apply a final coat of frosting and decorate with fresh dragon fruit cubes, berries, and sprinkles as desired.
  4. Chill the cake before serving for cleaner slices.

Notes

Cake layers can be made ahead of time and chilled before frosting. Let slices sit out briefly before serving for the best texture. Adjust the sweetness of frosting based on your preference for the balance with the fruit’s mildness.
