Preparation
- Preheat the oven to 350°F (175°C).
- Melt the butter and pour it into the bottom of a 9-inch round cake pan.
- Sprinkle the brown sugar evenly over the melted butter.
Arranging the Fruit
- Place the pineapple rings on top of the brown sugar.
- If desired, place a cherry in the center of each ring, and tuck extra pineapple bits around the edges.
Mixing the Batter
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, mix together the sugar and eggs until light in color.
- Mix in the milk, vanilla, and a splash of pineapple juice.
- Add the dry ingredients and stir just until combined, avoiding overmixing.
Baking
- Pour the batter gently over the arranged fruit in the pan.
- Smooth the top and bake for 35 to 45 minutes, until golden and a toothpick comes out clean.
- Let it cool in the pan for about 10 minutes, then run a butter knife around the edge and flip onto a plate.
Notes
This cake keeps well in the fridge for up to 4 days and is great to make ahead. It can also be frozen for up to 2 months. Let it sit at room temperature for a bit before serving.
