  • 1 cup pineapple, diced Use ripe fruit for sweetness.
  • 1 cup mango, diced Use ripe mango for the best flavor.
  • 1 small red onion, finely chopped Rinse in cold water if sensitive to onion strength.
  • 1 jalapeno, finely chopped Remove seeds for milder salsa.
  • 1 handful cilantro, chopped Optional; substitute with parsley if desired.
  • 1 to 2 limes, juiced Adjust based on sweetness of fruit.
  • to taste pinch salt Helps enhance flavors.
  • optional drizzle honey If fruit is not sweet.

Method
 

Preparation
  1. Chop the pineapple and mango into small bite-sized pieces, keeping them similar in size.
  2. Chop the onion, jalapeno, and cilantro.
  3. Combine all ingredients in a bowl and squeeze in the lime juice. Add a pinch of salt and stir gently.
  4. Taste and adjust flavors by adding more lime, salt, or jalapeno to preference.
  5. Let the salsa sit for 10 to 15 minutes to allow flavors to meld, then stir again before serving.

Notes

This salsa pairs well with chips, fish or shrimp tacos, grilled chicken, rice bowls, and can even be added to breakfast dishes. Store in a sealed container in the fridge for up to 2 days, but best enjoyed fresh.
