Ingredients
  

Main Ingredients
  • 1 cup chilled pineapple juice Use 100% pineapple juice with no added sugar.
  • 1/2 cup chilled coconut milk or coconut cream Coconut cream makes it richer.
  • 1-2 tablespoons fresh lime juice Start with 1 tablespoon, add more if you prefer it tangy.
  • 1-2 teaspoons honey or simple syrup Adjust based on the sweetness of the pineapple juice.
  • Ice
  • Sparkling water or lemon-lime soda Optional for topping.
Garnishes
  • 1 piece pineapple wedge For garnish.
  • 1 piece lime wheel For garnish.
  • toasted coconut For garnish.
  • 1 piece maraschino cherry For garnish.

Method
 

Preparation
  1. Fill a blender with a big handful of ice.
  2. Add pineapple juice, coconut milk or cream, lime juice, and sweetener if using.
  3. Blend for 10 to 20 seconds until creamy and frosty.
  4. Taste it. If it needs more zing, add a bit more lime. If it needs more sweetness, add a drizzle of honey.
  5. Pour into a glass and top with a splash of sparkling water if desired.
Serving
  1. If making for guests, blend the base without sparkling water and pour into a pitcher. Keep it in the fridge and add sparkling water to each glass right before serving.

Notes

Use chilled ingredients to prevent clumping. Store leftovers in the fridge for up to 2 days. For a twist, consider adding Greek yogurt or vanilla ice cream for a creamier texture.
