Preparation
- Fill a blender with a big handful of ice.
- Add pineapple juice, coconut milk or cream, lime juice, and sweetener if using.
- Blend for 10 to 20 seconds until creamy and frosty.
- Taste it. If it needs more zing, add a bit more lime. If it needs more sweetness, add a drizzle of honey.
- Pour into a glass and top with a splash of sparkling water if desired.
Serving
- If making for guests, blend the base without sparkling water and pour into a pitcher. Keep it in the fridge and add sparkling water to each glass right before serving.
Notes
Use chilled ingredients to prevent clumping. Store leftovers in the fridge for up to 2 days. For a twist, consider adding Greek yogurt or vanilla ice cream for a creamier texture.
