  • 1 can sweetened condensed milk This serves as the base for the fudge.
  • 2 cups white chocolate chips Melt these as the main sweetener and thickener.
  • 2 cups shredded coconut Use sweetened or unsweetened based on preference.
  • 1 cup pineapple (pureed or crushed) Well-drained to avoid excess moisture.
  • 1 pinch salt Enhances sweetness.
Optional Add-ins
  • 2 tablespoons crushed pineapple For extra fruity flavor.
  • 0.5 cup chopped macadamia nuts or cashews For a nutty crunch.
  • 1-2 drops rum extract For that rum flavor without the alcohol.
  • 0.5 cup white chocolate chips For a sweeter fudge.
  • 0.5 cup toasted shredded coconut Sprinkle on top for texture and flavor.

Method
 

Preparation
  1. Line an 8x8 inch pan with parchment paper.
  2. In a saucepan over low heat, melt the sweetened condensed milk and white chocolate chips, stirring continually until smooth.
  3. Remove from heat and stir in the shredded coconut, pineapple, and a pinch of salt.
  4. Add any optional add-ins like crushed pineapple, rum extract, nuts, or additional white chocolate chips.
Setting
  1. Pour the mixture into the prepared pan and smooth the top.
  2. If using, sprinkle toasted coconut on top immediately.
  3. Let it cool at room temperature for a bit, then refrigerate until firm.
  4. Once set, cut into squares and serve.

Notes

Store in an airtight container for up to 7 days in the fridge. For longer storage, wrap tightly and freeze for up to 2 months.
