Pico de Gallo

Ingredients
  

Fresh Ingredients
  • 4 pieces Roma tomatoes Meatier and less watery, scoop out seeds if very juicy.
  • 1 medium white onion Classic choice; red onion can be used for a sweeter taste.
  • 1/2 cup fresh cilantro Fresh and bright; parsley can be used as a substitute.
  • 1 piece jalapeno Remove seeds for milder heat; serrano can be used for more heat.
  • 1 tablespoon fresh lime juice Fresh lime is preferred for flavor.
  • 1/2 teaspoon salt Add to taste after resting.
  • 1 clove minced garlic Optional, for extra flavor.

Method
 

Preparation
  1. Chop the tomatoes, onion, cilantro, and jalapeno into small, even pieces.
  2. Add everything to a bowl and squeeze fresh lime juice over it.
  3. Season with salt, then stir well.
  4. Let it sit for 10 to 15 minutes, then taste and adjust lime or salt as needed.
  5. Serve right away, or chill for up to a couple of hours if you prefer it extra cold.

Notes

Pico de gallo is meant to be eaten fresh. Store in the fridge for a couple of days but it may lose its crispness. Control the heat by adjusting the jalapeno or serrano used.
