Preparation
- Chop the tomatoes, onion, cilantro, and jalapeno into small, even pieces.
- Add everything to a bowl and squeeze fresh lime juice over it.
- Season with salt, then stir well.
- Let it sit for 10 to 15 minutes, then taste and adjust lime or salt as needed.
- Serve right away, or chill for up to a couple of hours if you prefer it extra cold.
Notes
Pico de gallo is meant to be eaten fresh. Store in the fridge for a couple of days but it may lose its crispness. Control the heat by adjusting the jalapeno or serrano used.
