Preparation
- Beat the cream cheese with powdered sugar until smooth and fluffy.
- Add vanilla and peppermint extract. Taste and adjust mint flavor if desired.
- In a separate bowl, whip the heavy cream until it forms soft peaks, then fold it into the cream cheese mixture gently.
Assembly
- Layer the crushed cookies, then the cream layer, followed by crushed candy canes. Repeat the layers until the cups are full.
- Top with extra candy cane bits and a drizzle of chocolate if desired.
Chilling
- Let the parfait cups chill for at least 2 hours or 30 minutes if in a rush to allow the flavors to meld.
Notes
Store the parfaits in the fridge for up to 3 days. Add crushed candy canes right before serving to keep them crunchy.
