  • 1 1/2 cups pecan halves (toasted) Toast for 7-9 minutes at 350°F
  • 1 cup granulated sugar Regular granulated sugar
  • 1 cup brown sugar (packed) Light or dark brown sugar both work
  • 1/2 cup unsalted butter Use real butter, not margarine
  • 1/2 cup evaporated milk or whole milk Heavy cream makes them richer
  • 1 teaspoon vanilla extract Use real vanilla extract if possible
  • 1 pinch salt Adjust salt based on taste

Method
 

Preparation
  1. Toast the pecans if you have not yet. Let them cool.
  2. In a heavy saucepan, add granulated sugar, brown sugar, butter, and milk. Set heat to medium and stir until the butter melts and everything looks combined.
  3. Keep stirring gently as it comes to a steady bubbling boil. Once it is bubbling, let it cook for about 3 to 5 minutes, stirring often so it does not scorch.
  4. Take the pan off the heat. Stir in vanilla, salt, and toasted pecans.
  5. Beat the mixture with your spoon for about 1 to 3 minutes until it looks slightly thicker and creamy.
  6. Quickly scoop spoonfuls onto your lined baking sheet. Let them cool at room temp until set, usually 20 to 30 minutes.

Notes

If you want to be extra, sprinkle a tiny pinch of flaky salt on top right after scooping. Store pralines in an airtight container at room temperature for 4 to 5 days.
