Ingredients

Crust Ingredients
  • 2 cups all-purpose flour For the sturdy base.
  • 3/4 cup packed brown sugar Provides a warm flavor.
  • 1/2 teaspoon salt Enhances flavor.
  • 1 cup butter, cold and cut into cubes Necessary for a rich crust.
  • 1 teaspoon vanilla (optional) Adds extra flavor.
Filling Ingredients
  • 3 cups chopped pecans Toasted for enhanced flavor if possible.
  • 3 large eggs For binding the filling.
  • 1 cup packed brown sugar Sweetens the filling.
  • 3/4 cup corn syrup (light or dark) For the classic sticky texture.
  • 1/4 cup melted butter Incorporates into the filling.
  • 1 tablespoon vanilla Flavor enhancer.
  • 1/2 teaspoon salt Balances sweetness.

Method

Preparation
  1. Preheat your oven to 350°F. Line a 9x13 inch baking pan with parchment paper, allowing for overhang for easy lifting.
  2. For the crust, mix together the flour, brown sugar, and salt in a bowl. Cut in the cold butter until the mixture resembles crumbly sand.
  3. Press the crust mixture firmly into the prepared pan. Bake for about 18 to 20 minutes until set and lightly golden.
Make the Filling
  1. In another bowl, whisk the eggs, brown sugar, corn syrup, melted butter, vanilla, and salt until smooth. Fold in the chopped pecans.
Baking
  1. Pour the filling over the warm crust. Bake for another 25 to 30 minutes until the center is mostly set.
  2. Let cool completely at room temperature, then chill for at least 1 to 2 hours before slicing.

Notes

If the top browns too quickly, tent with foil for the last 10 minutes of baking. Bars may need extra chilling time to firm up properly.
