Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if available.
- In a small bowl, stir together flour, baking soda, and salt.
- In a larger bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until fluffy and lighter in color.
- Beat in the egg and vanilla extract.
- Add the dry ingredients and mix until there are no streaks of flour.
- Scoop the dough and roll into 1-inch balls, then roll each ball in granulated sugar.
- Place the dough balls on the prepared baking sheet with some space between them.
Baking
- Bake for 8 to 10 minutes, until the edges look set but the center is still soft.
- Immediately press a chocolate kiss into the center of each cookie after removing them from the oven.
- Let cookies cool on the pan for a few minutes before transferring to a rack or plate to cool completely.
Notes
Chill the dough if it's sticky due to warm kitchen conditions. Do not overbake for a soft center. Roll in sugar for added texture.
