For the peanut butter mixture
  • 1 cup Creamy peanut butter Regular kind works best, not super oily natural type.
  • 1 cup Powdered sugar To sweeten and firm up the mixture.
  • 1/2 cup Butter Softened, for a smooth, melt-in-your-mouth texture.
  • 1 teaspoon Vanilla extract A small amount makes a big difference.
  • 2 cups Chocolate for dipping Semi-sweet is preferred.
  • 1 pinch Salt Optional, if peanut butter is unsalted.

Preparation
  1. Mix peanut butter, softened butter, vanilla, and powdered sugar until it becomes a thick dough.
  2. Roll the mixture into small balls, about 1 inch in diameter.
  3. Chill the balls in the fridge until firm.
  4. Melt the chocolate, dip each ball in chocolate, then chill again until the chocolate sets.

Notes

If the dough is too soft to roll, chill in the fridge for 10 to 15 minutes. For smoother dipping, add a spoonful of coconut oil to melted chocolate. Store in an airtight container in the fridge for up to 2 weeks or freeze for 2 to 3 months.
