- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, peanut butter, and both sugars until fluffy and lighter in color.
- Mix in the egg and vanilla extract until well combined.
- Gradually sprinkle in the flour, baking soda, and salt, mixing just until the flour disappears.
- Scoop dough into balls, about 1.5 tablespoons each, and place them on the baking sheet, spaced apart.
- Press a small well in the center of each dough ball using your thumb or the back of a teaspoon.
- Spoon about 1 teaspoon of jelly into each well, careful not to overfill.
- Bake for 9 to 11 minutes, until the edges look set but centers are still soft.
- Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
Notes
Do not overbake as the cookies continue to set while cooling. Use crunchy peanut butter for added texture if desired. Store in an airtight container for up to 3 days or freeze for up to 2 months.
