Preparation
- Make a quick peach syrup: Slice 2 to 3 peaches and add to a pot with 0.75 cups of water and 1/3 to 1/2 cup sugar. Simmer on medium heat for about 10 to 12 minutes, stirring occasionally.
- Brew 3 to 4 cups of white tea while the syrup simmers; let it cool to room temperature.
- Juice the lemons to obtain about 0.75 cups of fresh lemon juice.
- Combine the cooled tea, lemon juice, and peach syrup in a pitcher. Adjust sweetness and dilution by adding more water or sweetener as needed.
- Serve in glasses filled with ice and garnish with peach slices or herbs.
Notes
Can be made up to 2 days ahead and stored in the fridge. For a fizzy version, top with sparkling water before serving. Adjust sweetness according to personal taste.
