Ingredients
  

Crust and Topping
  • 1 cup All-purpose flour Helps the crust and crumble hold their shape.

  • 1 large Egg Binds the crust layer.
Peach Filling
  • 4 cups Peaches, chopped Fresh or thawed frozen peaches work. Drain well if using frozen.
  • 1/4 cup Granulated sugar To sweeten the peach filling.
  • 1 Tbsp Lemon juice Wakes up the flavor of the peaches.
  • 2 Tbsp Cornstarch Thickens the filling for clean slices.
  • 1/2 tsp Cinnamon (optional) Adds warmth to the flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a 9x13 pan with parchment paper and lightly grease the exposed edges.
  2. In a large bowl, stir together flour, oats, brown sugar, baking powder, and salt.
  3. Pour in melted butter and add the egg. Mix until it resembles thick, sandy crumbs that clump when squeezed.
  4. Press about two thirds of the mixture firmly into the bottom of the pan.
Making the Filling
  1. In another bowl, combine chopped peaches, granulated sugar, lemon juice, cornstarch, and cinnamon (if using). Stir until cornstarch is evenly distributed.
  2. Spread the peach filling evenly over the crust, then sprinkle the remaining oat mixture on top without pressing down.
Baking
  1. Bake for 35 to 45 minutes, or until the top is golden and bubbling around the edges.
  2. Allow to cool at room temperature, then chill to make slicing easier.

Notes

These bars can be made with various fruits like nectarines or plums. For a crunchier topping, add chopped nuts. Store in an airtight container for up to 5 days in the fridge or freeze for up to 2 months.
