Dough and Filling
  • 1 sheet Puff pastry (store bought, thawed) Thawed in the fridge
  • 8 oz Cream cheese Full fat for best texture
  • 1/4 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1 large Egg For egg wash
  • 2 cups Peaches Fresh, canned, or frozen and thawed. Slice thin.
  • to taste Cinnamon, lemon zest, or pinch of salt Optional
Glaze (optional)
  • 1 cup Powdered sugar
  • 1-2 tbsp Milk or lemon juice For the glaze

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Mix the filling: In a bowl, stir cream cheese, sugar, vanilla, and a tiny pinch of salt until smooth. If your cream cheese is cold, let it sit out for 15 minutes first.
  3. Prep the peaches: Slice thin and, if they are super juicy, blot them with a paper towel.
  4. Set up the pastry: Unfold puff pastry on parchment paper. If it feels sticky, dust a tiny bit of flour.
Assembly
  1. Spread the cream cheese mixture down the center area of the pastry and layer peaches on top. Keep a border for folding.
  2. Beat the egg with a teaspoon of water, then brush the pastry edges for a golden top.
Baking
  1. Bake until golden and puffed, about 18 to 25 minutes.
  2. Let it cool for at least 10 minutes before glazing.
Glazing
  1. Mix powdered sugar with milk or lemon juice to make a glaze and drizzle over the cooled danish.

Notes

Keep the pastry cold for best results. Don't overload the filling and ensure the peaches are dry to avoid soggy pastry. Use parchment paper for easier cleanup.
