- Pour the broth into a small pot and bring it to a gentle boil.
- Stir in the pastina and lower the heat to let it simmer. Stir often to prevent sticking.
- Cook until the pastina is tender, usually 5 to 7 minutes, depending on the shape.
- Turn off the heat and stir in butter and parmesan until melted.
- If using egg, whisk it in a bowl first, then slowly stir it into the hot soup while stirring constantly.
- Taste the soup and add pepper and a pinch of salt only if it needs it.
Notes
Pastina is best enjoyed freshly made as the pasta continues to absorb broth, leading to a thicker texture if stored. For leftovers, store in a sealed container for up to 3 days. Reheating requires adding a splash of broth or water.
