Ingredients

Main ingredients
  • 1 stick Unsalted butter, melted and slightly cooled
  • 1 cup Brown sugar For that chewy, caramel flavor
  • 1/2 cup Granulated sugar Helps the edges crisp up
  • 1 large Egg Plus 1 egg yolk for an extra gooey center
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups All purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt Do not skip it, it makes the chocolate pop
  • 1 cup Chocolate chips Mix of semi-sweet and dark recommended
Optional Mix-ins
  • 1/2 cup Chopped walnuts or pecans Optional but adds great texture
  • 1 pinch Flaky salt For sprinkling on top
  • 1/2 cup Chocolate chunks For puddles of melted chocolate

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your skillet. If it is well seasoned, a quick swipe of butter is enough.
  3. In a bowl, mix melted butter with brown sugar and granulated sugar until it looks smooth and glossy.
  4. Stir in the egg, egg yolk, and vanilla. Mix until combined.
  5. Sprinkle in flour, baking soda, and salt. Stir just until you do not see dry flour anymore.
  6. Fold in most of the chocolate chips, saving a handful for the top.
  7. Press the dough into the skillet evenly and sprinkle the remaining chips on top.
Baking
  1. Bake for about 18 to 25 minutes, or until the edges look set and golden, and the center looks slightly soft.
  2. Let cool for 10 to 20 minutes before scooping; it will set up as it sits.

Notes

For the best texture, do not overbake and use a 10-inch skillet. Flavor variations include adding peanut butter, white chocolate, or cinnamon.
