Preparation
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, beat the softened cream cheese and softened butter until smooth.
- Add the egg and vanilla extract, and mix until combined.
- Slowly pour in the cake mix and stir until a thick, sticky dough forms.
- If the dough feels too sticky, chill in the fridge for 20 to 30 minutes.
Baking
- Scoop out dough into balls and roll them generously in powdered sugar.
- Place the dough balls on the prepared baking sheet, leaving space between each.
- Bake for 10 to 12 minutes. The edges should look set but the centers should remain soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
These cookies can be frozen both as dough balls or baked cookies. To freeze dough balls, scoop and roll them in powdered sugar, then freeze for 1 hour before transferring to a freezer bag. Baked cookies should cool completely before freezing.
