Cooking the Sausage
- Heat a pot on medium heat and add the sausage, cooking until browned. Break into small pieces.
- Scoop out excess grease, leaving a little for flavor.
Adding Vegetables
- Add chopped onion and cook for a few minutes until softened.

- Toss in chopped potatoes and any additional vegetables.
- Pour in the broth until everything is just covered.

Final Touches
- For a thicker soup, mash a few potatoes in the pot.
- If desired, add a splash of milk or half and half for richness.

Notes
This soup can also be made in a slow cooker: brown the sausage first, then add all ingredients and cook. Add dairy towards the end to avoid separation. Ideal for cozy weeknight dinners.
