One Pot Sausage and Potato Soup

Ingredients
  

Main Ingredients
  • 1 lb Italian sausage (mild or spicy) Choose based on preference.
  • 4 medium potatoes (Yukon gold or red) Cut into bite-sized pieces.
  • 1 large onion Chopped.
  • 3 cloves garlic Minced.
  • 4 cups chicken broth Can substitute with vegetable broth.
  • 2 medium carrots or stalks of celery Optional.
  • 1 cup milk or half and half Optional for creaminess.
  • to taste salt and pepper
  • 1 handful spinach or kale Optional, add at the end.

Method
 

Cooking the Sausage
  1. Heat a pot on medium heat and add the sausage, cooking until browned. Break into small pieces.
  2. Scoop out excess grease, leaving a little for flavor.
Adding Vegetables
  1. Add chopped onion and cook for a few minutes until softened.
  2. Stir in minced garlic for about 30 seconds.
  3. Toss in chopped potatoes and any additional vegetables.
  4. Pour in the broth until everything is just covered.
  5. Bring to a gentle boil, then reduce heat and let simmer until potatoes are fork tender (15-20 minutes).
Final Touches
  1. For a thicker soup, mash a few potatoes in the pot.
  2. If desired, add a splash of milk or half and half for richness.
  3. Stir in spinach or kale at the end.
  4. Taste and adjust seasoning with salt and pepper.

Notes

This soup can also be made in a slow cooker: brown the sausage first, then add all ingredients and cook. Add dairy towards the end to avoid separation. Ideal for cozy weeknight dinners.
