  • 4 pieces boneless skinless chicken breasts Slice thinner for even cooking.
  • 1/2 cup sun-dried tomatoes packed in oil Chopped into strips.
  • 3 cloves garlic Minced.
  • 1 cup heavy cream Can substitute with half and half for a lighter sauce.
  • 1 cup parmesan cheese Shredded.
  • 2 cups fresh spinach Wilts into the sauce.
Seasonings and Cooking Fat
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • optional chili flakes For extra heat.
Optional Add-Ins
  • 1 cup mushrooms Sliced, can be added for extra flavor.

Method
 

Preparation
  1. Pat the chicken dry with paper towels and season both sides with salt, pepper, and Italian seasoning.
  2. If the chicken breasts are thick, slice them in half horizontally.
Cooking the Chicken
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken and cook without moving it for about 4 to 5 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set it on a plate.
Building the Sauce
  1. In the same pan, add more oil if necessary and add minced garlic, cooking for 30 seconds.
  2. Add chopped sun-dried tomatoes and stir to combine.
  3. Pour in chicken broth, scraping any browned bits off the bottom of the pan.
  4. Lower the heat, then add the cream and parmesan, stirring until smooth.
Final Steps
  1. Stir in the spinach and let it wilt.
  2. Return the chicken to the pan, spooning sauce over it, and let everything simmer for a few minutes.
  3. Taste and adjust seasonings with more salt, pepper, or parmesan as desired.

Notes

Do not rush the sear for golden color. Use moderate heat with cream to avoid separation. Pair well with pasta, rice, mashed potatoes, or crusty bread for soaking up the sauce.
