Cooking the Chicken

- In the same pan, add more oil if necessary and add minced garlic, cooking for 30 seconds.

- Pour in chicken broth, scraping any browned bits off the bottom of the pan.
- Lower the heat, then add the cream and parmesan, stirring until smooth.
Final Steps
- Stir in the spinach and let it wilt.
- Return the chicken to the pan, spooning sauce over it, and let everything simmer for a few minutes.
- Taste and adjust seasonings with more salt, pepper, or parmesan as desired.
Notes
Do not rush the sear for golden color. Use moderate heat with cream to avoid separation. Pair well with pasta, rice, mashed potatoes, or crusty bread for soaking up the sauce.
