Ingredients

Main ingredients
  • 1 lb Steak (sirloin, flank, or whatever's looking good) Use the cut that's on sale.
  • 4 tbsp Butter Real butter is recommended, not margarine.
  • 6 cloves Garlic, minced Use lots of garlic for flavor.
  • 8 oz Pasta noodles (fettuccine, spaghetti, or linguine) Fettuccine is perfect, but use what you have.
  • 1 cup Parmesan or mozzarella cheese Mix both if desired.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 1 pinch Red pepper flakes Optional for added spice.
  • 1 cup Pasta water Use to loosen the sauce.

Method

Cooking
  1. Pat the steak cubes dry to ensure they get a solid sear.
  2. Heat a pan over medium-high heat and melt 2 tablespoons of butter.
  3. Add the minced garlic to the pan and sauté for a minute.
  4. Add the steak bites to the pan and cook until browned and crispy on the outside, about 5-7 minutes.
  5. Remove the steak from the pan and set aside.
  6. In the same pan, add the remaining butter and garlic, then add the cooked noodles.
  7. Swirl the noodles to coat them with butter and garlic, then add the cheese and some pasta water as needed to create a sauce.
  8. Return the steak to the pan and toss everything together. Serve immediately.

Notes

Make sure the steak is dry before cooking for better browning. Don't skip the pasta water to help combine everything, and serve immediately after mixing to prevent the noodles from getting weird.
