Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken with salt, pepper, and paprika. Sear in a bit of oil until golden brown, then transfer to a plate.
- In the same pan, sauté the onion until soft. Add garlic for about 30 seconds.
- Stir in the orzo and let it toast for a minute.
- Pour in chicken broth and scrape the bottom of the pan gently.
- Add the chicken back in, bring to a light simmer, cover, and bake for 15 to 20 minutes, checking at 15 minutes.
- Remove from oven and stir in spinach, cream, and parmesan. Let sit until spinach wilts and sauce thickens.
- Taste and adjust seasoning, adding a pinch of salt and a squeeze of lemon if desired.
Notes
Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 2 months. Reheat with a splash of broth or cream.
