  • 2 tablespoons olive oil For browning the chicken.

Preparation
  1. Pat the chicken thighs dry with a paper towel and season well with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken thighs and sear until golden brown, about 5-7 minutes without flipping.
Sauce and Braising
  1. Lower the heat and add minced garlic to the skillet.
  2. Pour in the chicken broth and lemon juice, then add the white beans.
  3. Return the chicken thighs to the skillet, cover, and let simmer gently until fully cooked, about 15 minutes.
Finishing Touches
  1. Add spinach in the last minutes of cooking to wilt.
