One Pan Garlic Herb Steak with Asparagus

An easy, delicious dinner of steak cooked in a garlicky herb butter alongside tender asparagus, all made in one pan.

Ingredients
  

For the steak and asparagus
  • 2 pounds ribeye, strip steak, or sirloin Choose a cut that sears well and stays juicy.
  • 1 bunch asparagus Look for medium thickness spears for even cooking.
  • 1/2 cup unsalted butter Use salted butter if desired but reduce added salt.
  • 3 cloves garlic, minced Fresh garlic is best; jarred garlic works in a pinch.
  • 2 tablespoons fresh parsley, chopped Can also include thyme or rosemary.
  • 1 lemon lemon juice Optional, but adds brightness to the dish.
  • to taste salt Season steak and asparagus to taste.
  • to taste black pepper Season steak and asparagus to taste.

Method
 

Preparation
  1. Let the steak sit out for 15 to 20 minutes to bring it to room temperature.
  2. Pat the steak dry with paper towels for better browning.
  3. Season both sides of the steak with salt and pepper.
  4. Heat a heavy pan until it is hot (cast iron recommended).
Cooking Steak and Asparagus
  1. Sear the steak for 3 to 5 minutes on each side depending on thickness.
  2. Lower the heat and add butter, garlic, and herbs to the pan after the initial sear.
  3. Baste the steak with the melted butter for 1 to 2 minutes.
  4. Add the asparagus to the pan once the steak is mostly cooked and stir gently to coat.
Resting & Serving
  1. Let the steak rest on a plate for 5 minutes before slicing.
  2. Serve the steak topped with the garlic herb butter and alongside the asparagus.

Notes

This recipe is flexible; you can swap ribeye for sirloin or other vegetables like green beans or broccoli. For lighter fare, mix half butter and olive oil.
