Preparation
- Let the steak sit out for 15 to 20 minutes to bring it to room temperature.
- Pat the steak dry with paper towels for better browning.
- Season both sides of the steak with salt and pepper.
- Heat a heavy pan until it is hot (cast iron recommended).
Cooking Steak and Asparagus
- Sear the steak for 3 to 5 minutes on each side depending on thickness.
- Lower the heat and add butter, garlic, and herbs to the pan after the initial sear.
- Baste the steak with the melted butter for 1 to 2 minutes.
- Add the asparagus to the pan once the steak is mostly cooked and stir gently to coat.
Resting & Serving
- Let the steak rest on a plate for 5 minutes before slicing.
- Serve the steak topped with the garlic herb butter and alongside the asparagus.
Notes
This recipe is flexible; you can swap ribeye for sirloin or other vegetables like green beans or broccoli. For lighter fare, mix half butter and olive oil.
