One Pan Dumpling Curry Bake

Ingredients
  

Main Ingredients
  • 1 package Frozen dumplings Any variety works (pork, chicken, shrimp, veggie, potstickers, gyoza).
  • 2 tablespoons Curry paste Red curry paste is recommended; green curry paste works if you prefer a more herbal flavor.
  • 1 can Coconut milk Full fat for creaminess, light can be used but will be thinner.
  • 1 cup Broth or water To loosen the sauce.
  • 2 cups Mixed veggies Such as bell peppers, broccoli, snap peas, mushrooms, spinach, zucchini.
  • 2 cloves Garlic Minced (jar version works too).
  • 1 tablespoon Ginger Grated (jar version works too).
Finishing Touches
  • 1 tablespoon Lime juice For brightness.
  • to taste Chopped cilantro For garnish.
  • to taste Sliced green onions For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, whisk together the coconut milk, curry paste, broth, minced garlic, and grated ginger.
  3. Add the mixed veggies to the sauce.
  4. Nestle the frozen dumplings directly into the sauce.
Cooking
  1. Bake for 18 to 25 minutes, or until the sauce is bubbling and dumplings are cooked through.
  2. Finish by squeezing lime juice over the dish and adding fresh cilantro and green onions.

Notes

To prevent dumplings from becoming soggy, keep the sauce just below the tops of the dumplings and do not cover the dish while baking. Quick cooking veggies like bell peppers and spinach are ideal for this recipe.
