Preparation
- Preheat your oven to 350°F (177°C).
- Place the unbaked crust in your pie dish and crimp the edges.
- In a bowl, whisk the eggs until blended, but do not whip vigorously.
- Whisk in the sugar, salt, and vanilla until combined.
- Slowly whisk in the milk to keep the mixture smooth.
Baking
- Pour the filling into the crust and sprinkle nutmeg lightly on top.
- Bake in the preheated oven until the edges look set but the center still jiggles slightly, about 45 minutes.
Cooling
- Cool on the counter and then chill in the fridge before slicing.
Notes
Do not overbake; the custard will firm up as it cools. Store in the fridge, covered, and consume within 2-3 days for best texture.
