- Wash the cabbage and lettuce, then spin dry. Chill in a zip-top bag with paper towels for at least 30 minutes.
- In a bowl, whisk together mayonnaise, red wine vinegar, lemon juice, sugar, minced garlic, paprika, salt, pepper, and Worcestershire sauce.
- Taste the dressing. Adjust sweetness with sugar or thickness with milk if necessary.
- In a large bowl, combine chilled greens, green onions, and most of the grated cheeses. Add half of the dressing and toss to coat.
- Serve immediately, topping with remaining cheese and chilled for up to 20 minutes if needed.
Notes
Keep greens cold and dressing bold for the best flavor. Dressing can be made up to 3 days in advance and stored in the fridge. For lighter calories, use half yogurt in place of half the mayo.
