Ingredients
  

For the crust
  • 1 cup crushed graham crackers
  • 2 tablespoons sugar for sweetness
  • 4 tablespoons melted butter to bind the crust
For the cheesecake filling
  • 8 ounces cream cheese, softened full fat recommended
  • 1/3 cup powdered sugar dissolves easily
  • 1 teaspoon vanilla extract for flavor
  • 1 cup heavy whipping cream whipped to soft peaks
  • a pinch salt to balance sweetness
  • 1 teaspoon lemon juice (optional) enhances strawberry flavor
For the strawberry layer
  • 2 cups fresh strawberries, sliced or use a quick strawberry sauce or jam

Method
 

Preparation
  1. In a bowl, combine the crushed graham crackers, sugar, and melted butter. Mix until the mixture resembles damp sand.
  2. Press the crust mixture into the bottom of each jar. Do not pack too tightly.
  3. In another bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, then blend until creamy.
  4. In a separate bowl, whip the heavy cream to soft peaks. Carefully fold the whipped cream into the cream cheese mixture.
  5. Taste the filling and adjust the sweetness with more sugar if necessary. Add a pinch of salt and lemon juice if using.
  6. Layer the cheesecake filling over the crust, then add a layer of sliced strawberries. Repeat the layers as desired.
  7. Cover the jars and refrigerate for at least 2 hours, but 4 hours or overnight for best results.

Notes

Serve the jars plain or with toppings such as whipped cream, additional strawberries, graham cracker crumbs, or a drizzle of strawberry sauce. Keep crunchy toppings off until serving to maintain texture.
