- Line an 8x8 pan with parchment paper, leaving some overhang.
- In a medium bowl, stir together peanut butter, honey, vanilla, and salt until smooth.
- Add the oats and mix until fully coated, resembling thick cookie dough.
- If using chocolate chips, allow the mixture to cool for a minute before stirring in.
- Press the mixture firmly into the prepared pan.
- Chill for at least 1 to 2 hours before lifting out and cutting into bars.
Notes
For best results, press the mixture firmly into the pan to avoid crumbles. Store in an airtight container for up to 7 days in the fridge or freeze for up to 2 months.
