Crust
  • 1 cup graham cracker crumbs or digestive biscuits
  • 1/2 cup melted butter
  • 1 pinch salt
  • 1 tablespoon sugar optional
Filling
  • 2 cups cottage cheese preferably full-fat for creaminess
  • 1/2 cup Greek yogurt
  • 1/3 cup honey or powdered sugar for sweetness
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice freshly squeezed
  • 1 pinch salt
  • 3 tablespoons cream cheese optional for extra richness
  • 1 teaspoon gelatin optional for firmer slices
Toppings

Preparation
  1. Make the crust: Mix the graham cracker crumbs with melted butter and a pinch of salt. Press the mixture into the bottom of a springform pan or pie dish. Refrigerate while you prepare the filling.
  2. Blend the cottage cheese: In a blender or food processor, blend the cottage cheese until completely smooth, scraping down the sides as necessary.
  3. Add the filling ingredients: To the blender, add Greek yogurt, honey (or powdered sugar), vanilla extract, lemon juice, and a pinch of salt. Blend again until creamy, adjusting sweetness or lemon juice if necessary.
  4. Fill and chill: Pour the filling over the crust, smoothing the top. Cover and refrigerate for at least 6 hours, preferably overnight.
  5. Top and serve: Add your desired toppings just before serving for freshness.

Notes

Blend the cottage cheese until no grainy texture remains for the best result. Chill overnight for enhanced flavor and better slicing. Consider using a springform pan for nice presentation.
