For the Coconut Cream Balls
  • 2 cups sweetened shredded coconut Use sweetened for the best texture.
  • 1 cup sweetened condensed milk Acts as a binder and adds sweetness.
  • 1 teaspoon vanilla extract For flavor.
For Coatings (Optional)
  • 1 cup melted chocolate Dark or milk chocolate can be used.
  • 1 cup powdered sugar Roll before serving for a fresh look.
  • 1 cup extra shredded coconut Use unsweetened if you're watching sugar.
  • 1/2 cup chopped nuts Almonds or pistachios work well.
  • 1/2 cup sprinkles Fun for kids!

Method
 

Preparation
  1. In a mixing bowl, combine sweetened shredded coconut, sweetened condensed milk, and vanilla extract.
  2. Mix until well combined, then cover and refrigerate for 20-30 minutes until the mixture firms up.
Shaping
  1. Using a small scoop or teaspoon, portion out the mixture and roll into small balls using damp hands.
  2. Place the rolled balls on a parchment-lined tray.
Coating
  1. Choose your desired coating. Dip in melted chocolate, roll in powdered sugar, shredded coconut, or chopped nuts.
  2. Allow coated balls to set in the fridge for about 30 minutes.
Storage
  1. Store in an airtight container in the fridge for up to 5 days.
  2. For longer storage, freeze for 4-6 weeks. Thaw in the fridge overnight before serving.

Notes

Best when chilled. Feel free to adjust the sweetness by using unsweetened coconut and adding more sweetener if needed.
