Ingredients
  

Base Ingredients
  • 2 cups Unsweetened shredded coconut For the base and coating
  • 1 can Sweetened condensed milk To bind and sweeten
  • 8 oz Cream cheese Soften before use
  • 1 tsp Vanilla extract For warmth
  • 1 pinch Salt To balance sweetness
Optional Add-Ins
  • 1/2 cup Finely chopped almonds or cashews For added crunch
  • 8 oz White or dark chocolate For dipping (optional)

Method
 

Preparation
  1. Soften the cream cheese until it is easy to stir, then stir until smooth and creamy.
  2. Mix in the sweetened condensed milk, vanilla, and salt until glossy and thick.
  3. Fold in most of the shredded coconut, a bit at a time, until the mixture holds together but is still moist.
  4. Chill the mixture for 15 to 20 minutes to firm up for rolling.
  5. Roll into small balls about 1 tablespoon each, optionally tucking a nut piece in the center.
  6. Roll each ball in the remaining coconut to coat.
Chilling
  1. Chill the balls again for 30 to 45 minutes so they set.

Notes

These No Bake Coconut Cream Balls are fuss free and can be served as is or dipped in chocolate for variety. Store in an airtight container in the fridge for up to a week or freeze for up to 2 months.
